Fall and Autumn menus

Fall and Autumn menus
are structured  much like those above.  Since Tuscan cooking is seasonal, the hostess will select the freshest produce and meats characteristic of each season.  Polenta smothered in wild boar sauce may be included in the winter menu while  porcini mushroom risotto takes the limelight in autumn when mushrooms are being plucked from underneath giant oak trees.  Ribollita (Tuscan bean and cabbage soup) is a must when black cabbage is in full bloom while homemade potato ravioli’s dressed in a traditional Bolognese sauce is always a hearty first course in both seasons,  as is a creamy Florentine lasagna.  While peposo (Black pepper beef stew braised in Chianti wine)  served with a ladle of white haricot beans  on the side is a real palate tempter on cold winter evenings.  Special entrée requests are always welcome.
